Hello! I thought water was a perfect theme for a mosaic today in light of the all the water Irene left for us! It is amazing that something so wonderful and needed can cause so much damage. Be Well!

Mosaic Monday
Hello! I hope you are well, I am trying to decompress after a very enjoyable vacation! Technically we are still on vacation, but I thought I would start to get back into the groove today! Hello! I am sorry for the lack of posts this past week, I just needed to take a bit of a "blog breather." However, I am refreshed and ready to get at it again. Today's mosaic is comprised of Irish castles that my family and I plan on visiting in the next few years. We are just waiting for my youngest son to get a bit bigger. Enjoy!

Temptation Thursday

Hello! I do not know about you but I LOVE yams and sweet potatoes, so when I find a recipe using one of those ingredients I go for it! This waffle recipe is WONDERFUL, you will not be disappointed. Enjoy!

Yam Waffles
Serves 4
Directions:
* 1 large yam (about 3/4 lb), ends trimmed
* 2 cups buttermilk pancake mix
* 1 3/4 cups water
* 1 Tbsp vegetable oil
* Nonstick cooking spray
* 2 pints strawberries, hulled, sliced and macerated
Equipment Needed:
* Waffle Maker
Directions:
1.) Preheat waffle iron.
2.) Pierce yam 4 or 5 times with tines of fork.
3.) Microwave on high until tender, 8-10 min; cool slightly.
4.) Cut in half, then remove yam from skin, using folk to break up slightly.
5.) Discard skin.
6.) Combine pancake mix, 1 3/4 cups water, and oil in large mixing bowl.
7.) Whisk until smooth.
8.) Add yam, whisking until well blended.
9.) Lightly coat waffle iron with cooking spray.
10.) Spoon batter into waffle iron.
11.) Close lid and bake until brown, 6-8 min or as directed.
12.) Repeat with remaining batter, coat iron with cooking spray each time.
13.) Serve warm with berry topping.

Stunning Sunday: Venice, Italy
Hello! I am so sorry to be MIA this week. The holiday orders have been pouring in and I have been swamped. (no complaints!) I just do not have the time to do EVERYTHING! Today I am blogging about a favorite city - Enjoy!

Information:
* Venice stretches across 117 small islands in the marshy Venetian Lagoon along the Adriatic Sea in northeast Italy.
* The saltwater Venetian Lagoon stretches along the shoreline between the mouths of the Po and the Piave Rivers.
* The city is connected with mainland Italy by a rail and highway bridge.
* Between the islands run about 150 canals, mostly very narrow, crossed by about 400 bridges.
* The Grand Canal, shaped like a reversed letter "S", is the main traffic artery; its main bridge is the Rialto.
* Gondolas, are the traditional means of transport, but sadly, they are being replaced by small river boats.
* Venice does have some public squares, and a few streets.
* Houses are built on piles to protect from flooding.
