Salivation Sunday: The Superbowl Edition!

Hello! I have returned! Vacation was wonderful, I will share more about it later in the week! Since today is Super Bowl Sunday I thought a recipe that is easy to make, sure to please and delicious was in order. Enjoy!

Turkey Chili
Serves 8

Ingredients:

* 2 Tbsp olive oil
* 2 lbs lean ground turkey
* 12 cloves garlic, minced
* 2 sweet red peppers, finely diced
* 1 green pepper, finely diced
* 1 large onion, minced
* 2 Tbsp McCormick Mexican-Style Chili Powder
* Salt to taste
* 2 Tbsp Worcestershire sauce
* 1 Tbsp soy sauce
* 2 dried bay leaves
* 1/4 tsp ground cloves
* 2 tsp ground cumin
* 2 cans diced tomatoes
* 4 cups chicken stock
* 2 cans great northern beans, rinsed & drained
* 2 cups grated cheddar cheese
* Crusty Italian bread

Equipment Needed:

* Large stockpot

Directions:

1.) Heat oil in large stockpot on medium-high until oil faintly smokes.
2.) Add ground turkey.
3.) Crumble and sear until lightly browned, about 5 min.
4.) Mix in garlic, peppers, and onions to browned ground turkey.
5.) Add chili powder, salt, Worcestershire, soy sauce, bay leaves, cloves, & cumin.
6.) Stir in tomatoes and stock.
7.) Bring to simmer.
8.) Add beans.
9.) Continue to simmer, uncovered, on medium-low 45 min, stirring occasionally.
10.) Discard bay leaves.
11.) Ladle chili into warmed bowls.
12.) Top with cheese.
13.) Serve with bread.

HAPPY NEW YEAR! I really cannot believe it is 2011, the time just flies by! As much as I love to cook, spending hours in the kitchen making meals and cleaning up after them is a big bummer. Over the next year I am going to share some wonderful, easy recipes with you, hopefully you will be able to spend more time doing other things besides slave in the kitchen. Enjoy!

Fruit & Yogurt Breakfast Surprise


Ingredients:

* 1 1/4 cups vanilla yogurt
* 1 cup granola cereal (your choice)
* 1 cup skim milk
* 1 cup strawberries, sliced
* 1 cup red grapes
* 1 cripin apple, finely diced
* 1 large banana, sliced
* 2 Tbsp honey (plus extra to drizzle)
* 1 cup chopped pecans
* 1/4 cup quinoa

Directions:

1.) Night before: Combine yogurt & granola cereal in a mixing bowl.
2.) Cover and refrigerate overnight.
3.) To serve: Add milk, fruit, and honey to granola mix.
4.) Combine well.
5.) Portion into bowls & sprinkle with pecans and quinoa.
6.) Drizzle with more honey if you would like.

Hint:

1.) Mixture can be refrigerated, without fruit, pecans & quinoa up to 3 days.

Stunning Sunday: Venice, Italy

Hello! I am so sorry to be MIA this week. The holiday orders have been pouring in and I have been swamped. (no complaints!) I just do not have the time to do EVERYTHING! Today I am blogging about a favorite city - Enjoy!



Information:

* Venice stretches across 117 small islands in the marshy Venetian Lagoon along the Adriatic Sea in northeast Italy.
* The saltwater Venetian Lagoon stretches along the shoreline between the mouths of the Po and the Piave Rivers.
* The city is connected with mainland Italy by a rail and highway bridge.
* Between the islands run about 150 canals, mostly very narrow, crossed by about 400 bridges.
* The Grand Canal, shaped like a reversed letter "S", is the main traffic artery; its main bridge is the Rialto.
* Gondolas, are the traditional means of transport, but sadly, they are being replaced by small river boats.
* Venice does have some public squares, and a few streets.
* Houses are built on piles to protect from flooding.

Salivation Sunday!

Hello! With the holidays upon us my thoughts ALWAYS turn to cookies. I love to make cookies and give them as gifts - people always appreciate food! The picture below shows three of the 15 types of cookies that I make (cherry, lemon, chocolate). Today I would like to share the recipe for the lemon cookies. Enjoy! (P.S. Tomorrow: Chocolate)

Ingredients:

Cookies:

* 1 cup butter
* 1 1/4 cups granulated sugar
* 4 eggs
* 1/3 cup plus 2 Tbsp sour cream
* 2 1/2 tsp lemon extract
* 1 tsp vanilla extract
* Zest of 1 lemon, grated
* 4 1/2 cups flour
* 4 1/2 tsp baking powder

Icing:

* 1 cup confectioners sugar
* 2-3 Tbsp warm milk
* 1/2 tsp fresh lemon juice

Directions:

Cookies:

1.) Preheat oven to 350 degrees.
2.) Beat together butter & sugar in medium bowl until light & fluffy
3.) Add eggs, sour cream, lemon extract, vanilla extract, and lemon zest.
4.) beat until combined, scraping down sides of bowl.
5.) Combine flour & baking powder; add to mixture in bowl.
6.) Beat just until moistened.
7.) Shape dough into small balls, using about 1 Tbsp for each.
8.) Arrange dough balls 1" apart on parchment paper-lined cookie sheets.
9.) Bake 10 min, until lightly browned.
10.) Do not over-bake - they will become too hard and dry.
11.) Remove from cookie sheets and cool.

Icing:

1.) Combine confectioners sugar & milk in small bowl.
2.) Whip lightly with spoon until smooth and slightly thick.
3.) Add lemon juice & stir briskly until well-combined.
4.) Dip tops of cookies into icing.
5.) Let set until icing is dry to the touch.
6.) Store in well sealed container.

Hello! Sorry I have not posted in a few days, my oldest son turned 8 and we have had a busy week celebrating!

Showoff Sunday!

Hello and Welcome!

There are so many things that I enjoy, so showing them should not be a problem! However, it is difficult to narrow down the choices. Since spring is right around the corner and thoughts of Cherry blossoms are swirling around my head - why not feature Cherry blossoms?!

They are one of my favorites: flower, tree, scent, color, etc... When you take a look at these products featuring Cherry blossoms you will see why I love them so much! I found so many lovely things and could go on for pages. This is my pared down list, Enjoy!

The National Cherry Blossom Festival is an annual celebration in Washington, D.C. This celebration commemorates the March 27, 1912, gift to the city of 3,000 Japanese cherry trees from the Mayor of Tokyo to strengthen the growing friendship between the United States and Japan.

Hamentaschen Gift Box from Zingermans!

Hamentaschen are wonderful triangle-shaped pastries filled with slightly sweet fillings. They are traditionally eaten as part of the Jewish celebration of Purim, which runs 2/28/10 - 3/1/10.




For those of you that have visited before, you will know that I LOVE Zingermans! The only problem I have: they are not located in my town!! They are my go to for gifts of all kinds. After all, you can never go wrong with food!

Assorted Easter Candy from Williams-Sonoma are Easter basket staples in our home.

I usually have to purchase each of these delicious treats individually, but Williams-Sonoma made it easy for me this year and is selling a set of all three! The jelly beans are awesome and with flavors like tangerine, key lime, lemon and pink grapefruit - you can't go wrong! The malted eggs are the best I have ever had and my kids LOVE the sour bunnies!





Williams-Sonoma is another of my favorite shops and I am very lucky to have a Grand Cuisine located in my local mall! (They know me by name!)

Souper Sunday!

Hello! I hope your weekend is going well! If you live in an area of the country/world affected by the cold, keep warm and be well! Today I have a recipe to warm your cockles!

Worries go down better with soup.

Chicken Rice Soup with Spinach
(adapted from Wegman's recipe)

Servings: 6

Ingredients:

* 1 Tbsp extra virgin olive oil
* 4 Boneless, skinless chicken breasts, thinly sliced crosswise (about 8 oz. each)
* 1/2 Cup finely chopped onion
* 2 Garlic cloves, peeled and minced
* 1 Pkg (10 oz) Fresh Spinach, stems removed, torn in bite-size pieces
* 1 Carton (32 oz) + 1 1/2 cups chicken stock (or broth)
* 1 1/2 Cups diced tomatoes (canned will work)
* 3/4 Cup instant Rice
* 1/4 Cup grated pecorino romano cheese
* Salt and pepper to taste
* 1 Loaf sliced Italian Bread


Directions:

1. Heat oil in medium stockpot on medium-high.
2. Add chicken and lightly brown, stirring occasionally. (about 2 min)
3. Add onion and garlic to pot and cook, stirring frequently, until soft and lightly browned.
4. Add spinach and cook, stirring until completely wilted.
5. Add broth and tomatoes, then cover.
6. Bring mixture to boil, then reduce heat to medium-low, simmer 10 min.
7. Stir in rice and remove from heat.
8. Let rest 5 min. (allowing rice to steep)
9. Stir in grated cheese.
10. Season to taste with salt and pepper.
11. Ladle into bowls and serve with Italian bread.
