Tasty Tuesday

Hello! Is it hot in your neck of the woods? If so, I am sure a simple summer salad is just what you need for dinner! Enjoy today's recipe - it is very delicious!

Grilled Peach, Prosciutto & Parmigiano-Reggiano Salad
Serves 4

Ingredients:

* 4 Tbsp pine nuts
* 4 peaches, each pitted & sliced into 4 wedges
* 2 Tbsp olive oil
* 1/4 tsp salt
* 1/2 tsp granulated sugar
* 1/2 lb Parmigiano-Reggiano wedge, cut in 12 wedges
* 12 slices prosciutto, sliced very thin
* Fresh black pepper
* 2 Tbsp olive oil
* Balsamic vinegar for garnish
* 32 Arugula leaves

Directions:

1.) Preheat oven to 375 degrees.
2.) Preheat grill to medium-high.
3.) Toast pine-nuts 3-4 min on baking sheet in oven. Let cool; turn off oven.
4.) Toss peach slices with olive oil; season with salt and sugar.
5.) Grill on medium-high, until peaches are char-marked.
6.) Chill peaches.
7.) Arrange salad on four chilled plates.
(3 cheese wedges, 3 prosciutto slices, 1 Tbsp. pine nuts, 4 peach wedges & 8 arugula leaves on each plate)
8.) Season with fresh black pepper.
9.) Drizzle extra-virgin olive oil and drop balsamic on plate for decoration.

Mangia Monday!


Prosciutto & Gorgonzola Pizza

Ingredients:

* 5 Tbsp Extra Virgin Olive Oil, divided
* 1 Pizza Dough Ball, brought to room temperature
* Salt and pepper to taste
* 2 large sweet onions, peeled, sliced thinly & cut in half
* 1/3 cup chopped parsley
* 1/4 cup chopped walnuts
* 1 1/2 cups Dried Calmyrna Figs, stemmed, sliced thin
* 4 oz. Italian Prosciutto, cut into 1" pieces
* 4 oz. Italian Gorgonzola cheese, crumbled


1.) Preheat oven to 450 degrees.
2.) Rub 1 Tbsp olive oil on bottom and sides of a large baking sheet.
3.) Press out and stretch dough ball on floured work surface, gently pulling and stretching to make dough same size as baking sheet.
4.) Place dough in oiled baking sheet, cover bottom of pan and halfway up the sides. 5.) Brush dough with 2 Tbsp olive oil and season to taste with salt and pepper. 6.) Place in oven on center rack; bake 12 min, until golden-brown.
6.) As crust bakes, prepare toppings.
7.) Heat 2 Tbsp olive oil in large saute' pan on medium; add onions.
8.) Cook, stirring, about 15 min, until onions are soft and golden-brown.
9.) Stir in parsley.
10.) Remove from heat and set aside.
11.) Place walnuts in the same pan; toast about 5 min.
12.) Cool walnuts and then chop.
13.) Remove crust from oven; let cool briefly. (Do not turn off oven.)
14.) Arrange onions, figs, prosciutto, and cheese on crust.
15.) Return pizza to oven and bake about 10 min.
16.) Remove from oven and and cut into small pieces.
17.) Place in a platter and top with chopped walnuts.

Hello! I REALLY LOVE coffee cake! This recipe that I am sharing with you is an absolute favorite! The steps look long and maybe even daunting - no worries! It is very easy once you have all the ingredients. I broke the steps down (therefore there are more of them) to make it easier to understand the recipe. Enjoy!

Brown Sugar & Macadamia Nut Coffee Cake

Ingredients:

Topping:
* 2/3 cup all-purpose flour
* 1/3 cup granulated sugar
* 1 tsp. ground cinnamon
* 1/2 tsp. ground ginger
* 6 Tbs. cold unsalted butter, cut into small pieces

Cake:
* 1 cup unsalted macadamia nuts
* 1 cup all-purpose flour
* 1/2 cup cake flour
* 1/2 cup granulated sugar
* 1/2 cup firmly packed light brown sugar
* 1 1/2 tsp. baking powder
* 1 tsp. baking soda
* 1/4 tsp. salt
* 1 cup sour cream
* 2 eggs
* 1/2 cup canola oil
* 1 1/2 tsp. vanilla extract

Directions:
1.) Preheat oven to 350°F.
2.) Grease a 9-inch round springform pan.
3.) Line the bottom of your pan with parchment paper and grease the paper.

To make the topping:
1.) In a small bowl, stir together the flour, sugar, cinnamon and ginger.
2.) Add the butter and using a pastry cutter or your fingers, cut or rub in the butter until coarse crumbs form.
3.) Set aside.

To make the cake:
1.) Coarsely chop the macadamia nuts and set aside.
2.) In a bowl, stir together the all-purpose and cake flours, granulated and brown sugars, baking powder, baking soda and salt.
3.) In another bowl, whisk together the sour cream, eggs, oil and vanilla until well blended.
4.) Stir the sour cream mixture into the flour mixture.
5.) Using an electric mixer on medium speed beat until smooth and creamy, about 1 minute.
6.) Spoon half of the batter into the prepared pan and spread evenly.
7.) Sprinkle evenly with half of the topping.
8.) Cover evenly with the remaining batter.
9.) Sprinkle evenly with the nuts, gently pressing them into the batter, then cover with the remaining topping.
10.) Bake until the topping is golden brown and a toothpick inserted into the center of the cake comes out clean, 40 to 45 minutes.
11.) Transfer the pan to a wire rack and cool for 20 minutes.
12.) Remove the sides of the springform pan.
13.) Serve the cake warm or at room temperature.

Temptation Thursday!

I was having a hard time thinking of what I wanted to tempt you with today - I mean there are so many recipes to choose from. No fear, I finally decided on something!

I am going to share two recipes today. Both are easy to make and use readily available ingredients! Enjoy!

Banana Pecan Stackers

Serves: 4

Ingredients:

* 4 Dessert plates
* 1 Frozen pound cake, defrosted and sliced into 12 pieces
* 2 Cups rice pudding (use the pre-made kind found in your dairy section)
* 4 Small bananas, peeled and sliced into 1/4-inch thick pieces
* 4 tsp. real maple syrup, warmed
* 4 tsp. chopped pecans
* Powdered sugar

Directions:

1.) Have all your ingredients set up, like a buffet, in the order listed above.
2.) You will use 3 slices of pound cake, 1/2 cup rice pudding, 1 banana, 1 tsp. maple syrup and 1 tsp. of pecans per plate.
3.) Take a dessert plate and layer the ingredients in following order: one slice pound cake, 1/4 cup rice pudding, 1/2 of the slices from 1 banana; repeat layers.
4.) Top off with the remaining slice of pound cake.
5.) Drizzle with maple syrup and sprinkle with nuts.
6.) Sift powdered sugar over the top just before serving.

Turkey Sausage & Pear Breakfast Sandwiches

Serves: 4

Ingredients:

* 4 Light english muffins, toasted
* 4 Ounces (approx 4 thin slices) extra sharp cheddar cheese
* 4 Turkey sausage patties, cooked thoroughly
* 2 Medium pears, cored and cut into thin slices

Directions:

1.) Preheat oven to 350°.
2.) Place toasted english muffin halves, crust-side down, on a baking sheet.
3.) Top bottoms of the english muffins with 1 cheddar cheese slice per muffin.
4.) Evenly distribute and place pear slices on top of cheddar cheese.
5.) Place cooked turkey sausage on top of pear slices.
6.) Cover with top halves of the english muffins.
7.) Bake 2-3 min, until cheese begins to melt.
8.) Serve warm.
