Tasty Tuesday

Hello! Can you believe the New Year is upon us? I cannot believe how quickly 2010 has passed! I have a great drink recipe to share with you - it is one of my favorites, in fact I may make it too much. Enjoy!

Winter Mimosa
Serves 2

Ingredients:

* 1 cup water
* 1 cup sugar
* 1 1/2 Tbsp whole cloves
* Cocktail Sugar
* 2 oz Asti or champagne
* 1 clementine orange, un-peeled, cut in half
* 1 oz vanilla vodka
* 2 oz orange juice
* fresh raspberries

Equipment Needed:

* Cocktail shaker
* Muddler
* 2 champagne glasses

Directions:

1.) Make clove simple syrup:

a.) Add water, sugar, and cloves to small saucepan on low.
b.) Cook, stirring, until sugar is dissolved.
c.) Chill and strain out cloves.
d.) Set aside 1 1/2 oz syrup; refrigerate remainder for other uses.

2.) Moisten glass rims w/citrus wedge & coat with cocktail sugar.
3.) Chill glasses.
4.) Pour 1 oz asti into each chilled champagne glass.
5.) Muddle orange and syrup in bar shaker; fill with ice.
6.) Add vodka and orange juice.
7.) Shake and strain into glasses.
8.) Garnish with raspberries.

Hello! I hope you are doing well. I had a late night last night, so am very slow this morning! I have only had 1 cup of coffee so far!! My boys are clean and fed, so I guess that is a start! I have a wonderful little dessert to share with you today - it is so yummy! Make sure to use day old bread - it soaks up the liquid much better!

Apple-Cherry Bread Pudding
Serves: 10

Ingredients:

* 4 Tbsp butter, melted, divided
* 1 10 oz baguette, cut into 1/2" cubes (day old)
* 2 unpeeled Granny Smith apples, coarsely grated
* 1 cup dried cherries
* 1 Tbsp orange zest
* 3 cups half and half
* 7 large eggs
* 1 cup sugar
* 1 Tbsp vanilla extract
* 1 Tbsp almond extract
* 1 tsp ground nutmeg
* 1/2 tsp ground cinnamon
* confectionery sugar

Directions:

1.) Preheat oven to 350 degrees
2.) Coat bottom and sides of large roasting pan with 1 Tbsp butter.
3.) Place baguette, cherries, apples, & orange zest in pan.
4.) Mix ingredients thoroughly.
5.) In a large bowl, whisk together 1/2 &1 /2, eggs, sugar, vanilla, nutmeg, cinnamon, & remaining 3 Tbsp butter.
6.) Pour over baguette mixture, stirring to mix thoroughly.
7.) Let rest 10 min.
8.) Bake, uncovered for 45 min, until knife inserted in center comes out clean.
9.) Let rest 15-20 min before serving.
10.) Scoop into plates and sprinkle with confectionery sugar.

Mangia Monday!

Sangria
Servings: 17

Ingredients:

* 3 bottles Rioja (Spanish red wine)
* 1 can (12 oz) frozen limeade concentrate
* 1 cup brandy
* 1 cup Triple Sec
* 3 lemons, finely sliced
* 3 limes, finely sliced
* 3 oranges, finely sliced
* 2 pears, finely sliced
* 2 peaches, finely sliced
* Ice
* 1 liter sparkling water

Directions:

1.) Mix wine, limeade, brandy, liqueur, & fruit in large pitcher
2.) Stir well.
3.) Chill at least 2 hours.
4.) Place ice into tall glasses.
5.) Pour sangria over ice, until glass is 4/5 full.
5.) Top off with sparkling water.
6.) Garnish with more fruit.

Watermelon Martini
Servings: 2

Ingredients:

* cocktail sugar
* 4 oz (1/2 cup) vodka
* 8 oz (1 cup) Watermelon Margarita Mixer
* ice
* 2 watermelon wedges

Equipment Needed:

* 2 margarita glasses (chilled)
* Shallow bowl
* Shaker

Directions:

1.) Pour cocktail sugar into a shallow bowl.
2.) Moisten glass rims with water.
3.) Invert glasses and dip into bowl filled with sugar.
4.) Set glasses to the side.
5.) Add ice to shaker (fill 3/4).
5.) Pour vodka and cocktail mixer over ice in shaker.
6.) Shake vigorously and strain into glasses.
7.) Garnish with fresh watermelon wedge.

Wine is sunlight, held together by water.

Hello! I hope you had a wonderful weekend! Today I have a simple appetizer recipe for you. It can also be used as part of a main course if you would like! I use raspberry preserves because: 1.) they are my favorite and 2.) I find it goes well with brie. However, you can use any preserve you would like! Enjoy!

Brie & Clementine Canapes

Serves: 12

Ingredients:

* 1 Clementine, peeled, and separated into segments
* 12 French baguette slices, toasted
* 1/4 lb triple creme brie, cut in 12 pieces
* 12 tsp Raspberry preserves
* 1 tsp sesame seeds, toasted

Directions:

1.) Cut each orange segment in half diagonally and set aside.
2.) Top baguette slices with brie.
3.) Top brie with fruit spread and orange.
4.) Sprinkle with sesame seeds.
5.) Arrange in platter and serve.

Tasty Tuesday!

Hello! I hope you are having a wonderful day everyone! I have a great meal to share with you - it is one of my husband's favorites!

Italian-Style Slow-Roasted Pork Roast
Serves: 8

Ingredients:

*3 small onions, peeled, and thinly sliced
*2 navel oranges, unpeeled, thinly sliced
*1 pork tenderloin (4-5 Lbs.)
*6 cloves garlic, peeled and minced
*1 Tbsp. fennel seed
* Salt and fresh black pepper
*2 Tbsp. corn starch
*2 Tbsp. cold water
*1 1/2 cups gravy (your choice)

Equipment Needed:

* Roasting Pan
* Medium sauce pan
* Gravy Separator

Directions:

The day before serving:

1.) Combine onion and orange slices in roasting pan.
2.) Diagonally score fat-side (top) of pork about 1/2" deep in a diamond pattern.
3.) Rub garlic and fennel seeds into top of pork.
4.) Season well with salt and pepper.
5.) Place pork on top of onion and orange slices.
6.) Cover with plastic wrap and refrigerate overnight.

The day of the meal:

1.) Preheat oven to 275 degrees.
2.) Remove plastic wrap from pork and bake uncovered, 2-3 hours.
3.) Remove pork from oven.
4.) Carefully place roast on clean platter and allow to rest.
5.) As roast rests, ladle hot juices in roasting pan into gravy separator.
6.) Pour de-fatted liquid (about 1.5 cups) into a medium sauce pan.
7.) Discard remaining liquid, onions, and oranges.
8.) Combine cornstarch and water in a small bowl and set aside.
9.) Add gravy to the juices in the sauce pan and bring to a simmer.
10.) Mix in corn starch mixture and cook, whisking well - about 2 min.
11.) Serve with pork.

Cooked Rappi
Serves: 4

Ingredients:

*6 cups water
*3 Tbsp. lemon juice
*6 cloves garlic, peeled and minced
*1 Tbsp. sea salt
*1/2 cup extra virgin olive oil
*12 ounces fresh chopped rappi
*1/4 cup asiago cheese, grated

Equipment Needed:

*Large sauce-pan

Directions:

1.) Mix water, lemon juice, garlic, salt, and oil in sauce-pan.
2.) Cook on high 2-3 minutes.
3.) Add rappi and bring to boil.
4.) Cover pan.
5.) Cook mixture 8-10 min. (rappi should be tender and has changed color)
6.) Place rappi on a serving dish.
7.) Sprinkle with cheese and serve.

Roasted Fingerling Potatoes
Serves: 8

Ingredients:

*1 1/2 Lbs. fingerling Potatoes, washed and cut in half
*3 Tbsp. extra virgin olive oil
*1/2 tsp. rosemary
*1/2 tsp. thyme
*1/4 cup onion, finely diced
*3 garlic cloves, peeled and finely minced
* Sea Salt
* Fresh cracked black pepper
* Nonstick cooking spray

Equipment Needed:

*Large baking sheet
* Aluminum Foil

Directions:

1.) Preheat oven to 450 degrees.
2.) Line baking sheet with foil and coat with non stick spray.
3.) Toss potatoes and olive oil in large bowl.
4.) Mix in herbs, onions and garlic - coating potatoes.
5.) Arrange in single layer baking sheet.
6.) Roast 25-30 min on center rack, until potatoes are tender and light brown.
