Mangia Monday!

Today I have two great drink recipes to share with you. Enjoy!

The first recipe is non-alcoholic and has been a popular summer tradition in Massachusetts since the early 1900s. The first time I had this drink was in Cape Cod many years ago, and now it is a yearly tradition for us on the Cape! You can make it with almost any type of berry and it would taste just as wonderful!

My second recipe today is an alcoholic drink, called a Mojito! The Mojito is known as the national drink of Cuba. Many people say it was invented in the late 19th century but, it actually may date back to an even earlier origin. It has been said that “pirates” of old, may have concocted drinks similar to the mojito, perhaps in the 16th century. The earliest mojito may have been a combination of a rum variant, aguardiente (fire water), and that these pirates of old introduced the drink to Cuba.

Frozen Lemonade w/ Blackberry Puree
(adapted from Williams-Sonoma)

Serves: 4

Ingredients:

* 1 1/4 cups plus 1 tsp lemon juice
* 1/3 cup orange juice
* 3/4 cup plus 2 Tbs simple syrup (recipe below)
* 1 pint fresh blackberries, juiced, plus more for garnish
* 4 1/2 cups ice cubes
* 4 fresh mint sprigs (optional)
* 4 Iced Tea glasses

Directions:

1.) Stir together 1 1/4 cups lemon juice, the orange juice and 3/4 cup simple syrup. in a small bowl. Set aside.
2.) In another bowl, stir together the blackberry juice, 1 tsp. lemon juice and 2 Tbs. simple syrup. Set aside.
3.) Put the ice cubes in a blender and add the lemon juice mixture.
4.) Using the crush setting, (or high speed), blend until smooth.
5.) Put 1 Tbs of the blackberry puree into each glass.
6.) Pour in the lemonade mixture, dividing evenly.
7.) Garnish each glass with a mint sprig and a few blackberries.
8.) Serve immediately.

Mojito:

Serves: 2

Ingredients:

* 12 fresh mint leaves
* 3 Tbs simple syrup (recipe below)
* 2 Tbs lime juice
* Crushed ice as needed
* 2 ounces light rum
* 2 ounces club soda
* 2 lime wedges
* 2 high ball glasses

Directions:

1.) Place the mint leaves in the bottom of the highball glasses.
2.) Add the simple syrup and lime juice and mix well.
3.) Fill the glasses with crushed ice.
4.) Add the rum and club soda and stir.
5.) Garnish with the lime wedge.


Simple Syrup:

Ingredients:

* 1 cup water
* 1 cup sugar

Directions:

1.) In a small saucepan over medium-high heat, bring water to a simmer.
2.) Add the sugar and stir until it completely dissolves.
3.) Remove the pan from heat and set aside to cool to room temperature.
4.) Pour the syrup into a pint sized container and seal.
5.) Refrigerate until ready to use.

Hello! I hope you are having a wonderful day. The following recipe is a delight, especially if you like bourbon! It is not hard to make, but it does require some preparation a day or two prior to serving.

I like to use fresh berries, but if you are in a pinch frozen berries can be used also. Mint is a pretty garnish, but definitely not necessary! Enjoy!

Berries with Bourbon & Ice Cream

Servings: 6

Ingredients:

* 3- 6 oz pkgs. raspberries
* 8 oz strawberries, stemmed and halved
* 1 pint blueberries
* 1 pint blackberries
* 1/2 cup plus 2 Tbsp granulated sugar, divided
* 3/4 cup bourbon
* 1/2 tsp vanilla extract
* 1 cup heavy cream
* 1 pint french vanilla ice cream

Directions:

Day or 2 before serving:

1.) Combine berries, 1/2 cup sugar, and bourbon in bowl.
2.) Stir and mix well.
3.) Cover and refrigerate 24-72 hours.

Day you're serving:

1.) Combine 2 Tbsp sugar, vanilla extract, and heavy cream in bowl.
2.) Whisk until soft peaks form, 3-4 min to make fresh whipped cream.
3.) Place 1 scoop of ice cream into 6 individual bowls.
4.) Top with berries and whipped cream.
5.) Serve immediately.

Tasty Tuesday!

Hello and Welcome! I hope everyone is doing well. Desserts are big in our home, it is just an extension of dinner. More time for us to sit around and connect.

Today I have an easy, yet sinful dessert for you! If you do not want to make the entire recipe, cutting it in half is easy and no changes to the recipe are needed. My boys love this dessert and it is always a hit with guests! Enjoy!

Roasted Bananas with Brown Sugar & Rum Sauce
Servings: 12

Ingredients:

* 1/2 cup light brown sugar
* 1 fresh orange, zested and juiced
* 1 Tbsp dark rum
* 1/2 tsp vanilla extract
* 1/8 tsp cinnamon
* 9 bananas, peeled and cut into 3/4" slices
* 1 fresh lemon, zested
* 1/4 cup macadamia nuts, chopped and toasted
* 2 pints french vanilla ice cream


Equipment Needed:

* Porcelain or ceramic quiche dish


Directions:

1.) Preheat oven to 400 degrees.
2.) Mix sugar, 1 Tbsp orange juice, rum, vanilla, cinnamon, orange and lemon zest in large bowl.
3.) Fold bananas into orange juice mixture until well coated.
4.) Place banana mixture in quiche dish.
5.) Cover with foil and place on center rack of oven.
6.) Bake for 10 minutes.
7.) Remove from oven and remove foil.
8.) Stir gently to coat bananas and re-cover with foil.
9.) Bake 12-14 min until bananas are soft, but still hold their shape.
10.) Remove from oven and remove foil.
11.) Sprinkle with chopped nuts.
12.) Scoop into 12 serving dishes.
13.) Top each portion with 1 scoop of ice cream.

Recently I was asked if I had a recipe for gelato - well, I do!

Today I am going to share a few with you - enjoy!





First a primer on gelato:

Gelato, is the Italian version of ice cream. Therefore, gelato is made with some of the same ingredients as most ice-creams: milk (and cream), sugar (and other sweeteners), flavorings (fruits, nuts, essences, etc.) and air are the main ingredients. Gelato can be made using the hot process (w/ pasteurization) or the cold process(w/o pasteurization). Like top of the line ice cream, gelato generally has less air, which results in a denser product.

The History of Gelato dates back to the 16th century. There is some confusion as to where or who really invented gelato. Most stories credit Bernardo Buontalenti, a native of Florence, who delighted the court of Caterina dei Medici with his creation. Italians are certainly credited with introducing gelato to the rest of Europe; with Sicilian born Francesco Procopio dei Coltelli, as one of the first to sell it to the public. He went to Paris in 1686, and opened a café named after himself called "Café Procope". It became one of the most celebrated literary establishments in France. Meanwhile, in Italy, the art of traditional gelato making was passed on from father to son, improved and perfected right up to the 20th century.

I am am very partial to gelato - in our home, we do not go out for ice cream, we go out for gelato!

If you do not have time or the means to make gelato, there are some very good companies who make their own and will kindly ship it to you (for a small fee of course!).

Vanilla Gelato
(Makes 1 quart)

1-1/2 cups heavy cream
1-1/2 cups whole milk
1 cup sugar
1 vanilla bean, split lengthwise

1.) In a medium saucepan, combine the cream, milk, and sugar.
2.) Cook over medium heat until the mixture comes to a simmer.
3.) Remove from heat.
4.) Scrape the vanilla seeds into the milk, add the bean, and let sit for 30 minutes.
5.) Strain into a clean bowl discarding the vanilla bean.
6.) Cover and refrigerate for at least 2 hours or overnight.
7.) Transfer to an ice cream maker and freeze according to manufacturer's directions.




Chocolate Gelato
(Makes about 3 cups)

1/2 cup sugar
2 tablespoons cornstarch
Pinch of salt
2 cups whole milk, divided
5 ounces semisweet chocolate, finely chopped
1/2 cup heavy cream
1 teaspoon vanilla extract
* Options

1.) In a medium saucepan, combine sugar, cornstarch, and salt.
2.) Gradually add 1/4 cup milk, whisking to dissolve cornstarch.
3.) Whisk in remaining milk.
4.) Cook over medium heat until mixture thickens and comes to a boil.
5.) Allow to boil for 1 minute, stirring occasionally. Remove from heat.
6.) Add chocolate and allow to sit for 1 minute. Sit until chocolate is melted and smooth.
7.) Transfer mixture to a medium bowl. Mix in the cream and vanilla.
8.) Cover and refrigerate for at least 2 hours or overnight.
9.) Transfer to an ice cream maker and freeze according to manufacturer's directions.

*Options: Add chopped peanut butter cups, crushed toffee candy, chopped nuts,
chocolate chips, or other candy during last 2 minutes of churning in ice cream maker.




Peach Gelato
(Makes 1-1/2 quarts)

4 cups whole milk
2 cups ripe peaches, peeled, pitted, and chopped (about 4 peaches)
Juice of 1 lemon
3/4 cup sugar, divided
4 egg yolks

1.) In a medium saucepan, bring the milk to a simmer.
2.) Remove from heat, cover, and set aside.
3.) In a blender or food processor, puree the peaches, lemon juice, and 1/4 cup of sugar until smooth.
4.) Set aside.
5.) In a blender or food processor, blend 1/2 cup sugar and yolks until smooth and thick.
6.) With the machine running, gradually add the hot milk.
7.) Return the mixture to the saucepan and cook over medium heat.
8.) Stir constantly for 6-8 minutes until the mixture begins to thicken.
9.) Remove from heat and set in a bowl of ice water.
10.) Stir for 2 minutes to cool the mixture.
11.) Stir in the pureed peaches.
12.) Cover and refrigerate for at least 2 hours or overnight.
13.) Transfer to an ice cream maker and freeze according to manufacturer's directions.
