Hello! I hope you are doing well - the sun is shining here, so I am fabulous! Today's recipe is an easy side dish, that can also serve as a main dish - you decide. I am not a cauliflower fan, but I really like this, hopefully you will also. Enjoy!

Cauliflower and Spinach Gratin

Ingredients:

* 1 head cauliflower, broken into small florets
* 10 oz fresh spinach, stemmed (large stems only), rinsed
* Salt and pepper to taste
* 1 cup seasoned bread crumbs, divided
* 1/4 cup parmesean cheese, grated
* 1 jar (13 oz) alfredo sauce
* 1/2 cup mozzarella cheese, grated
* 1 Tbsp olive oil
* non-stick pan spray

Equipment Needed:

* 13x9x2 baking dish
* Large mixing bowl
* Small mixing bowl

Directions:

1.) Preheat oven to 350 degrees.
2.) Spray baking dish with non-stick spray and set aside.
3.) Add cauliflower and spinach to large mixing bowl.
4.) Season to taste with salt and pepper.
5.) Add 1/2 cup bread crumbs, alfredo sauce, and mozzarella.
6.) Mix well and set aside.
7.) Topping: Combine 1/2 cup of bread crumbs, cheese & olive oil in small bowl.
8.) Add vegetable-cheese mixture to baking dish.
9.) Bake 40 min, uncovered, stirring halfway through.
10.) Remove from oven; sprinkle with topping.
11.) Return to oven; bake 15 min, until topping is light golden brown.

Hello! As much as I love to cook, making dinner daily has become a chore. Sadly, we have started to eat out more and more - I need to put a stop to that! After all, I post so many of our favorite recipes I don't have an excuse. (Except for caring for my boys, washing the clothes, cleaning my home, running my business, etc.....) Starting today I vow to be better and only eat out two days a week, not four! Care to join me?

Tortellini w/ Spinach, Roasted Cauliflower & Tomato Sauce

Ingredients:

* 1 head cauliflower, broken into florets
* Salt and pepper to taste
* 3 Tbsp extra virgin olive oil
* 1 cup baby spinach
* 2 cups tomato sauce (your favorite)
* 1 1/2 Lbs. cheese Tortellini (cooked al dente)
* Grated Pecorino Romano Cheese
* Italian Bread

Directions:

1.) Preheat oven to 450 degrees
2.) Toss cauliflower with olive oil in large bowl.
3.) Arrange on baking sheet in a single layer; season to taste with salt & pepper. 4.) Roast cauliflower 25-30 min, until softened and lightly browned.
5.) Transfer cauliflower to a large bowl and set aside.
6.) Add baby spinach to cauliflower and toss until wilted.
7.) Season to taste with salt and pepper.
8.) Toss vegetables with warmed sauce and cooked pasta.
9.) Sprinkle with cheese.
10.) Serve with bread.

Hello! I hope everyone is having a great week. I am a bit late posting today - but better late, than never they say! Enjoy this quick and tasty recipe!

Fruit Trifle
serves: 4

Ingredients:

* 1/2 Angel Food Cake (store made), cut into 1-inch pieces (about 30)
* 1/2 cup Brewed espresso coffee, cooled
* 1 cup Vanilla low-fat yogurt
* 2 cups Mixed fresh berries
* 1 Plum, pitted and thinly sliced
* 1/4 cup Wheat Crunch Cereal (ie. grapenuts)

Directions:

1.) Arrange cake pieces on baking sheet & drizzle with coffee, moisten all sides.
2.) In trifle bowl layer cake, yogurt, berries, plum, and cereal, saving a little yogurt and fruit for garnish.
3.) Chill at least 10 minutes prior to serving.
