Hello! Today I would like to share a recipe for one of my favorite salads. It is very flavorful and refreshing, not to mention, out of the ordinary! For best results prepare this dish a day ahead of time. Enjoy!
Jicama, Mango and Yam Salad
Ingredients:
* 4 cups yams, peeled and diced
* 5 1/2 Tbsp olive oil, divided
* Salt and pepper to taste
* 1 jicama, trimmed and cut in thin strips
* 2 1/2 cups mango, peeled and diced
* 1/4 cup cilantro, chopped
* Juice and zest of 1 orange
* Juice and zest of 1 lemon
* Juice of 2 limes
* 2 Tbsp apple cider vinegar
* 1/2 tsp ground allspice
Directions:
1.) Preheat oven to 350 degrees.
2.) Toss yams in 2 Tbsp olive oil; season with salt and pepper.
3.) Place yams on baking sheet.
4.) Bake about 20 min or until tender.
5.) Remove from oven and cool.
6.) Blanch jicama 2 min in pot of boiling, salted water until cooked & still firm.
7.) Drain jicama and transfer to bowl of ice water.
8.) Drain well once cooled.
9.) Toss yams, jicama, mango, cilantro, remaining ingredients in a mixing bowl.
10.) Season to taste with salt and pepper.
11.) Chill before serving.
