Hello! I have another fabulous soup recipe for you today! Enjoy!



Minestrone Soup
(adapted from Wegman's)

Servings: 12

Ingredients:

* 1 Tbsp extra virgin olive oil
* 2 strips bacon, diced
* 1 cup carrots, diced
* 1 cup celery, diced
* 1 cup potatoes, diced
* 1/2 cup zucchini, diced
* 1/2 cup onions, finely chopped
* 1/2 cup leeks, chopped
* 1/2 cup cabbage, finely chopped
* 2 cloves garlic, minced
* 6 cups chicken stock
* 1 can cannellini beans, not drained
* 1 can garbanzo beans, drained
* 1 can crushed tomatoes with herbs
* 1 cup elbow pasta
* 1/4 cup thinly sliced basil
* 2 Tbsp finely shredded parmesan cheese
* Salt and pepper to taste
* 1 Loaf Italian bread


Directions:

1.) Heat oil in large stockpot on medium.
2.) Add bacon and cook until crispy.
3.) Add all the vegetables to the pot and cook 2 min.
4.) Add garlic and cook 2 minutes more
5.) Mix in stock, beans, and tomatoes and bring to boil.
6.) Reduce heat to low and simmer, covered, 15 min.
7.) Stir in pasta.
8.) Cook 20 min, until carrots and potatoes are tender and pasta is soft.
9.) Mix in basil and cheese and cook 5 minutes more.
10.) Season to taste with salt and pepper.
11.) Ladle into bowls and serve with bread.
